​Sweet Potato Latkes

From their farm to your home; this recipe comes from Laughing Child Farm. It’s perfect for enjoying the season’s sweet potatoes. Pair with savory toppings like black beans, sour cream, or salsa, or if you like it sweet, try applesauce.

Ingredients:

  • 1.5–2 lbs shredded sweet potatoes

  • 1 cup flour

  • 1 tsp salt

  • ¼–½ tsp pepper

  • ½ cup diced or shredded red or white onion (optional)

  • 3 eggs, beaten

  • ½ cup milk (add more for a thinner batter)

  • 3 tbsp olive oil

  • Vegetable oil for frying

Directions:

  • Mix the shredded sweet potatoes, flour, salt, pepper, and onion in a bowl. Add the eggs, milk, and olive oil, stirring until combined. Heat ¼ inch of vegetable oil in a skillet over medium-high heat until it bubbles around the batter. Drop ¼ cup of batter into the skillet and press lightly into pancake shapes. Cook for about 5 minutes per side, or until golden brown. Drain on paper towels before serving.

  • These latkes are best served fresh but can be kept warm in the oven for up to 2 hours.
