Mashed Sweet Potato Recipe

INGREDIENTS

  • 2 lbs sweet potatoes (approximately 2 large potatoes), peeled and diced

  • 1 1/2 Tbsp butter

  • 1 Tbsp maple syrup

  • 1/4 tsp cinnamon

  • 1/4 tsp salt

  • ​1/8 tsp pepper

DIRECTIONS

  • Cook potatoes in boiling water until tender. Drain in a colander, allowing to steam slightly.

  • Puree sweet potatoes with the butter, maple, cinnamon, salt, and pepper. Do not overmix.

  • Taste and add more salt and pepper, if needed. Serve warm.
