Mashed Sweet Potato Recipe
INGREDIENTS
2 lbs sweet potatoes (approximately 2 large potatoes), peeled and diced
1 1/2 Tbsp butter
1 Tbsp maple syrup
1/4 tsp cinnamon
1/4 tsp salt
1/8 tsp pepper
DIRECTIONS
Cook potatoes in boiling water until tender. Drain in a colander, allowing to steam slightly.
Puree sweet potatoes with the butter, maple, cinnamon, salt, and pepper. Do not overmix.
Taste and add more salt and pepper, if needed. Serve warm.
